Simple is better. The grilled with butter and lemon trend expressed here is the way to go, however, if you indeed have a “bunch” of tails or if it borders on “plethora” proportions, you can save some of your cooked tails for a “lobster salad”. Very little mayo, celery salt and white pepper to taste. Add a skosh of minced red onion and some minced celery and very little freshly minced parsley. Less of everything but lobster is more in this case. Let the flavor of the bug come through. Think of the other ingredients as a lobster delivery system. Then, get one of those cheap white bread tiny hot dog buns, butter both sides and toast in a hot cast iron skillet until golden, greasy and well toasted. Then, stuff the lobster salad in the bun until it gets ridiculous looking and over flowing and impossible to eat like a sandwich and splitting open on the bottom. Enjoy outside on the deck under the umbrella accompanied by a well chilled pinot grigio or a French country ale like a Trois Monts. If you didn’t make a mess eating it you did it wrong.
